Why isn't the inside of my guitar
finished with lacquer or something?

There are several reasons why it is not.
1. The lacquer finish on the outside of your guitar only
protects
against dirt and splashes of water for
example. It really doesn't
protect against humidity.
Lacquer and varnish are not vapor barriers.
2. There
are debates
about whether it affects the sound of the guitar.
My opinion is it would have to at least
a little.
3. Repairs inside the guitar such as on bracing would be more difficult.
